There are many different types of kitchen extraction fans. They range through axial, centrifugal, and blower fans. There are roof fans, cooling fans, fire fighting fans and portable ventilation fans. The range and diversity of products is an indication of the extent of the benefits they provide.
The need for good ventilation is behind the need for extraction canopies. Harmful substances and gasses need to be expelled from rooms and the extraction stimulates the flow of fresh air into a building. Air quality has emerged as one of the most important issues in environmental health.

Working in humid or polluted air can cause coughing, sneezing and drowsiness which in turn can lead to costly absenteeism. More insidious may be the low productivity of people who continue working, but slowly and ineffectively.
Conversely, workers in well ventilated spaces are likely to be healthier, happier and more productive. They may not put ‘good ventilation’ down on any questionnaire as reasons for satisfaction because ventilation is something that is often taken for granted. People are often happy at the seaside because fresh air is in their lungs, but would possibly not articulate the cause for their feeling of well being. They may also be happier in a well ventilated factory.
The benefits of industrial extractor fans might also not be put into words by chickens, cows or pigs, yet they are probably just as sensitive to good or bad ventilation as human beings. Even plants are extremely sensitive to air flows and can wilt and die if exposed to unhealthy humidity or poor ventilation. Therefore, an unseen but significant benefit of adequate ventilation is in the production of healthy food and the avoidance of sick building syndromes.
